I remember how much trouble I used to have making the perfect hard boiled egg. To get it cooked all the way through was ALWAYS an issue.  The yolk would always be a bit raw and making egg salad would be half wasteful.

Paleo Pizza

This past weekend I wanted to venture out of my recent comforts of food and make a paleo pizza for my husband and I.  I knew I was going to keep it dairy free, gluten free, and aside from a little corn on top it is paleo.  I spent a little bit of time online researching different recipes to see what I wanted to include and not include in my dough.  I already knew it wasn’t going to be a “traditional” pizza because I am trying to avoid dairy as much as possible. Chicken Sofrito – Whole 30 Approved

About 2 weeks ago my husband came home with a recipe from work that he wanted to make for our January Whole 30.  I was all for it since it was one less thing I had to make.

I gave him some of the chicken that I was planning to use for something else and we swapped it out for this.  The marinade we used is called a sofrito (Caribbean and Latin American sauce of tomatoes, onions, peppers, garlic, and herbs). Continue reading

Turkey Meatloaf – Recipe – Whole 30 Approved

Throughout my Whole 30 journey I made a lot of meat balls either out of chicken or turkey.  They were an easy item and already portioned.  I knew exactly how many to eat to get the correct amount of protein.  I decided to change it up a bit once I finished because we needed something different so I went with a meatloaf.

Roasted Root Vegetables – Recipe

I am a summer obsessed girl.  I love all things summer.  The sun.  The heat.  The pool.  Having BBQs.  Fun outdoor adventures.  The beach and everything in between.

That being said I am all about the fall because of the delicious scents and foods that appear in the stores during that time of year.  This past weekend I went to buy new hand soap at Bath & Body Works and of course the entire bag was filled with fall scents!

When I decided last week I was going to make this dish it made me slightly sad because it screams fall, changing leaves, cooler temperatures, and shorter days.  I did have the intentions to make it because I wanted to use up some straggling ingredients in the kitchen.  Continue reading

Whole 30 – One Pot Chicken

When doing my Whole 30 research last month I asked around for different accounts and recipes that people liked so that I could create a list of what to make.  One friend suggested putting chicken breast in the crock pot.  This past weekend I did just that!  The recipe is so simple and it came out SO SO SO delicious!

This will make about 6-8 total servings if you follow exact. If not you will need to add more chicken to get what you need to satisfy your stomach

Ingredients

4 thick cut chicken breast – boneless skinless
1 can of petite diced tomatoes
1 onion sliced
3 teaspoons Italian seasoning (or a mix of your favorite Italian style spices added to your liking)
1-2 tbsp garlic
1 cup water

Place all ingredients into the crock pot and cook for 8 hours on low.

Once done shred the chicken and eat over spaghetti squash with some tomato sauce.

Quinoa Crispies

I can say for certain that I was not always a fan of quinoa.  When I first tried it I could barely stomach it.  I looked around trying to figure out ways to make it taste better.  I looked for ways that I could not eat it.  Maybe find something else that was as good of a selection.  I found cooking it with a broth made it taste better but rarely do that anymore.  I did not find much that was healthier so that option was down the drain. Perfect Fit Almond Cacao Raisin Bites

Last Thursday evening I had the honor of once again meeting the two ladies who inspire me every single day to wake up, workout, and make me want to be a better person.  For those who aren’t sure who I am talking about that would be Karena & Katrina from Tone It Up.
